Barley Vegetable Soup

Ingredients

  • Ghee
  • Kapha churna
  • 1 small onion, chopped
  • 2 large carrots sliced
  • 1 stalk of celery, diced
  • 2 quarts of vegetable stock
  • Dandelion or mustard greens
  • Mushrooms (sliced shiitakes are good)
  • 1/2 cup of barley
  • 1 tsp thyme
  • 1 bay leaf

Instructions

In a large soup pot, sauteĢ in a little ghee the kapha churna, onion, carrots and celery.

Add the vegetable stock, greens, mushrooms, barley, thyme and bay leaf.

Cover and simmer for about 1 hour.
