Black Bean and Avocado Salsa

Ingredients

  • 1/2 lime juiced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp salt
  • 1-1/2 cups black beans cooked and rinsed
  • 1 small avocado cubed
  • 3-4 green onions or 1/2 yellow onion chopped
  • 1/4 cup packed cilantro leaves, chopped

Instructions

This is a tasty, easy and quick to make salsa that packs in some protein, good fiber, and healthy fats.  This salsa is very good served with salmon.  In the picture I served it with salmon and kimchee over a bed of mixed greens.

In a bowl mix lime juice, cumin, coriander, and salt.  Gently stir in remaining ingredients.
