Cashew Cheese (from Tina)

Ingredients

  • 1-1/4 cups raw organic cashews, soaked in purified water overnight
  • 1/3 cup nutritional yeast
  • 1 lemon, juiced
  • 2 TBSP water
  • 1-1/2 tsp apple cider vinegar
  • 1 clove garlic
  • 1/2 tsp salt
  • White pepper...lil bit
  • 1/2 tsp ground mustard
  • 3 TBSP coconut milk...maybe a little more depending on consistency
  • Optional: add basil, oregano and thyme for an herbed cheese

Instructions

Omgosh this is delish 🙂

Just blend all ingredients in a vitamix or nutribullet type blender 🙂

Notes:

We both like it plain for certain things but I add basil oregano and a lil thyme to mine for an herbed cheese. This is delicious topped with sauerkraut and put on sliced watermelon, radishes or toasted and buttered organic sourdough bread.
