  • 1-1/4 cups raw organic cashews, soaked in purified water overnight
  • 1/3 cup nutritional yeast
  • 1 lemon, juiced
  • 2 TBSP water
  • 1-1/2 tsp apple cider vinegar
  • 1 clove garlic
  • 1/2 tsp salt
  • White pepper...lil bit
  • 1/2 tsp ground mustard
  • 3 TBSP coconut milk...maybe a little more depending on consistency
  • Optional: add basil, oregano and thyme for an herbed cheese

Instructions

Omgosh this is delish 🙂

Just blend all ingredients in a vitamix or nutribullet type blender 🙂

Notes:

We both like it plain for certain things but I add basil oregano and a lil thyme to mine for an herbed cheese. This is delicious topped with sauerkraut and put on sliced watermelon, radishes or toasted and buttered organic sourdough bread.

Excellent culinary salts are available from here.

High quality salts, herbs, spices and nuts can be found here.

Nuts.com has very nice organic nuts but they also sell a lot of junk food I do not support. Therefore the only food I buy from them are their organic nuts and seeds.

If you’re in South Central PA, you can get sourdough bread from McGrath’s. It is a local bakehouse in Mechanicsburg that makes bread right!  They use unhybridized local ancient grains, mill the grains themselves right before the make the bread and all their breads are real sour dough (no added yeast in anything!).  They have several drop off locations, Cornerstone Coffee house is one of them, so is radish and rye at the Broadstreet Market,  https://mcgrathsbakehouse.com
