Christine’s Coconut Green Beans

Ingredients

  • 1 TBSP Ghee
  • 1-2 tsp Mustard seeds
  • 1-2 TBSP Urad dal (white lentils)
  • Green beans, chopped fairly small
  • 2 whole chili peppers or chili pepper flakes
  • Lots of shredded coconut
  • Salt & pepper to taste

Instructions

In a skillet, melt ghee, add mustard seeds and urad dal (white lentils) to the ghee.  Let sauté until they begin to pop and sputter.

Add green beans and chili peppers, saute briefly.  Add lots of shredded coconut and cook until tender-crisp.

Add salt and pepper to taste.
