- Extra virgin olive oil
- Pine nuts
- Organic fresh spinach
- Fresh Parmesan cheese, grated
- Cooked pasta (optional)
In a skillet, toast pine nuts in olive oil, add spinach and cook until wilted. Remove from heat and grate fresh Parmesan over top.
I prefer this plain but it can be put over pasta too.
