Roasted Okra

Ingredients

  • About 16 okra pods
  • Coconut oil
  • Salt & pepper

Instructions

Slice okra (like you do a cucumber) so that it looks like dime size pieces (but thicker than a dime). Lay it in a single layer on a ceramic roasting pan. Drizzle with coconut oil and sprinkle with salt and pepper.

Roast at 425 degrees for 10-15 minutes.
