Sweet Potato Ginger Soup

Ingredients

  • 2 TBSP ghee or butter
  • 3/4 tsp of any of Shekhar’s churnas or spice mixtures (link in notes)
  • 2 large onions, chopped
  • 1 -3” piece of ginger, chopped
  • 3 cloves garlic, chopped
  • 1 large sweet potato
  • 3 cups vegetable or chicken stock
  • 1 TBSP brown sugar
  • 1 cup yogurt or 1 cup coconut milk (coconut milk will make sweeter soup) or a mix of the two
  • 1 TBSP lemon juice

Instructions

Melt the ghee and sauté the spice mixture. Add the onion until it starts to caramelize. Add the chopped ginger and garlic and sauté for another minute.

Add sweet potato and broth and bring to a boil. Reduce heat, cover and simmer, adding brown sugar (if using coconut milk you may want to skip the brown sugar).

Simmer until the sweet potato is soft. Add lemon juice, yogurt or coconut milk. Puree the mixture with a hand blender or in a full size blender (only fill half way to allow heat to escape).

This is good with herbed goat cheese!
