Vegetable Burgers – great for grilling or making a “traditional” burger

Ingredients

  • 1 small butternut squash (if time roast ahead of time -- its easier!)
  • 1/2 head of cauliflower
  • 1 small head of broccoli
  • 1/2 cup chopped walnuts
  • 1/4 cup sunflower seeds
  • 1/4 cup slivered almonds
  • 1/4-1/2 of onion, chopped
  • 1 egg
  • 1/2 peice of organic sourdough bread toasted extra toasty and crumbed in a nutribullet or similar OR 1-2 TBSP of almond meal

Instructions

This is a very fun recipe to make with friends.  It is easy to make but has a couple steps to it which make it a fun recipe for cooking together.

Cut squash in half and roast for 1 hour or until soft at 350 degrees.

Steam together cauliflower and broccoli until tender and mash-able.

Combine your nuts and seeds, 1 cup total — any combination of any nuts and seeds will work, I have made these with whatever nuts and seeds I have at the time.

Mash steamed vegetables and squash together and stir in nuts and seeds, onion, breadcrumbs and egg.

Make into burgers and grill or fry as usual. 

This is very good topped with cheese as a cheeseburger.

This recipe is from my cousin, Cindy 🙂  We had a nice evening cooking together, this is one of the dishes we made.
