- Ghee, butter or coconut oil
- Spices to taste: cumin, ginger, turmeric, pepper, fenugreek
- 1/2 cup sweet potatoes
- 1/2 cup squash
- 1/2 cup peas
- 1/4 cup beets
- 1/4 cup beet greens
- 2 to 4 cups water
- Parmesan cheese (optional)
Melt ghee, butter, or coconut oil in a big pot. Add in spices and sauté briefly. Add in chopped vegetables and sauté briefly. (Save greens to add at the end).
Cover with water and bring to simmer. Simmer covered 20-40 minutes to desired vegetable tenderness.
Add in the leafy greens. Turn off heat and let greens wilt in the uncovered pot (so the greens maintain their color).
This is good topped with parmesan cheese
